Tasting Notes:
A wine of pale yellow color and a rich, fruity bouquet with aromatic herbal flavors.  Well balanced between sweet and acidity.  Remarkable size and admirable aromatic length.

Recommended Foods:
Traditionally served with desert, it is also well-suited as an aperitif because of its low degree of alcohol, amazing sparkling fragrance and its light sweetness.

Vinification:
After the must has been softly pressed, and lightly filtered, it is cooled down to -2 C until they decide to start fermentation.  Then the temperature is raised to 18-20 C, and selected yeasts are added in 50 hl. autoclaves for 8 to 10 days, at controlled temperature. 
the fermentation is stopped when the desired alcoholic degree is reached.  When the wine is put in the bottles, it is filtered by means of microspore sterile filters, in order to totally eliminate the yeasts.
